Avocado BLT Grilled Cheese (Printable)

Golden grilled cheese loaded with crispy bacon, fresh vegetables, creamy avocado, and melted cheddar between buttery sourdough bread.

# What you need:

→ Bread & Dairy

01 - 4 slices sourdough or country white bread
02 - 2 tablespoons unsalted butter, softened
03 - 4 slices cheddar or Monterey Jack cheese

→ Meats

04 - 4 slices thick-cut bacon

→ Vegetables

05 - 1 ripe avocado, sliced
06 - 1 medium tomato, sliced
07 - 2 leaves romaine or butter lettuce

→ Condiments & Seasoning

08 - Salt and freshly ground black pepper to taste

# Directions:

01 - Cook bacon slices in a skillet over medium heat until crispy, approximately 5-7 minutes. Transfer to paper towels to drain excess grease.
02 - Lightly butter one side of each bread slice using the softened unsalted butter.
03 - Place two bread slices buttered side down on a work surface. Layer each with one cheese slice, bacon, lettuce, tomato, and avocado slices. Season avocado and tomato with salt and pepper. Top with remaining cheese slices and bread slices with buttered side facing up.
04 - Heat a large nonstick skillet or griddle over medium-low heat. Place sandwiches in the skillet and cook until golden brown with melted cheese, approximately 3-4 minutes per side, gently pressing with a spatula for even cooking.
05 - Remove sandwiches from skillet and allow to cool for 1-2 minutes. Slice diagonally in half and serve immediately while warm.

# Expert tips:

01 -
  • It tastes like a diner splurge but takes less than twenty minutes in your own kitchen.
  • The creamy avocado melts into the cheese in a way that feels almost luxurious.
  • Crispy bacon and buttery grilled bread make every bite ridiculously satisfying.
  • You can customize it endlessly and it still turns out delicious every single time.
02 -
  • If your heat is too high, the bread will burn before the cheese melts, so keep it on medium low and be patient.
  • Softening the butter first is non negotiable because cold butter rips the bread and spreads unevenly.
  • Don't skip the resting step after grilling or you'll end up with molten cheese all over your hands.
03 -
  • Press the sandwich gently with your spatula while it cooks to help the cheese melt evenly and keep everything compact.
  • Use a cast iron skillet if you have one because it distributes heat beautifully and gives you an even golden crust.
  • Slice the tomato thick enough to taste but thin enough that it doesn't make the sandwich slide apart.
