Stove-Top Creamy Risotto (Printable)

A creamy Italian rice dish simmered gently on the stove, enriched with mushrooms or Parmesan cheese.

# What you need:

→ Rice

01 - 1 1/2 cups Arborio rice

→ Vegetables & Aromatics

02 - 2 tablespoons olive oil
03 - 1 small onion, finely chopped
04 - 2 garlic cloves, minced
05 - 9 oz cremini or button mushrooms, sliced (optional)

→ Liquids

06 - 5 cups warm vegetable or chicken broth
07 - 1/2 cup dry white wine

→ Finishing

08 - 3 tablespoons unsalted butter
09 - 2/3 cup freshly grated Parmesan cheese (optional)
10 - Salt and freshly ground black pepper, to taste
11 - 2 tablespoons chopped fresh parsley (optional)

# Directions:

01 - Heat olive oil in a large saucepan over medium heat. Add chopped onion and cook until soft and translucent, about 3 minutes.
02 - Stir in minced garlic and cook for 1 minute. If using mushrooms, add them now and sauté until golden and moisture evaporates, about 5 minutes.
03 - Add Arborio rice and cook, stirring constantly, for 2 minutes until the grains are coated and slightly translucent at the edges.
04 - Pour in white wine steadily, stirring continuously until the wine is completely absorbed.
05 - Add warm broth one ladleful (approximately 1/2 cup) at a time, stirring gently and allowing most liquid to absorb before adding more. Continue until rice is creamy and al dente, about 18 to 22 minutes.
06 - Remove from heat, stir in butter and Parmesan cheese until melted and creamy. Season with salt and pepper to taste.
07 - Sprinkle chopped parsley if desired and serve immediately.

# Expert tips:

01 -
  • The slow absorption method creates a perfectly creamy and al dente texture.
  • Flexible options to enjoy as Mushroom or Parmesan Risotto, or both combined.
  • A comforting but elegant dish that suits everyday meals or special occasions.
  • Vegetarian-friendly and easily adapted to vegan preferences.
02 -
  • Warm your broth before adding it to avoid interrupting the cooking temperature of the rice.
  • Stir gently to prevent breaking rice grains but frequently enough to release the starches that create creaminess.
  • Use high-quality Arborio rice for optimal texture and consistency.
  • If you like, finish with a little extra butter and cheese off the heat for extra richness.
